Midsummer: Harvested at the beginning of August, this honey is a very pale yellow, with a more delicate, floral flavor. Whip this with some butter to spread on an english muffin, or add to your tea. Some of the flowers blooming while the bees were harvesting this nectar include: Basswood, purple and white prairie clover, hairy wood mint, grey-twigged dogwood, milkweed, and beardtongue.
State Fair Special: The great Minnesota get-together means a little something else at Bee Tree Farm, as during the last week of August we get together with a few hundred thousand buzzy friends for our final honey harvest of the year. This later honey is a golden color, and has a richer, more robust flavor. When the winter feels long, drizzle some of this on a slice of toasted wheat bread, and taste what August felt like. Some of the flowers blooming in our prairie during the month between our first harvest and this one include: brown and black eyed susans, late figwort, goldenrod, Joe Pye weed, blazing stars, and Maximilian’s sunflower.
